You will need
- 3 cups of milk from an Adinkerke cow
- 4 teaspoons of lemon juice
- a generous dose of love
- 2 tablespoons of seawater (scooped from De Panne beach at sunrise)
- a hammam towel from the Visit De Panne online shop
- a wooden spoon made from bushwood from the Calmeynbos
- a pinch of sand from the Westhoek reserve to decorate it
- a saucepan
- a clear voice
Recipe
Pour three cups of milk into the saucepan while loudly singing the chorus of the Dune Song. Slowly heat the milk to 80 degrees Celsius, stirring continuously. It’s very important to keep stirring the milk (and singing); otherwise it will burn. You can find the lyrics of the chorus below this recipe.
Once the milk reaches a temperature of 80 degrees Celsius, turn off the heat, but leave the saucepan on the hob.
While stirring, add the four teaspoons of lemon juice to the hot milk, magically turning it into curds and whey. Curd is the hard part, whey the liquid. After this step, you can stop singing, otherwise you won't get authentic Pannekaas.
Keep stirring with the spoon and let the mixture stand for 5-10 minutes. Now add your love for De Panne.
Pour the curd and whey through the hammam towel. The curd eventually becomes the cheese.
Open the towel, and if you want, add some De Panne seawater.
Mix the cheese and seawater, then squeeze again to remove any extra moisture.
Put the cheese in a mould, or leave it in the shape of a ball.
Place the cheese in the fridge. Decorate it with the sand from the Westhoek Reserve.
